Although the traditional Indian lime pickle contains lots of spices, the Moroccan version is simple and very easy to make. If you've never tasted lime pickle before, I'll strongly recommend taking it with your daily diet. It improves digestion and is also a good source of Vitamin-C. This pickle takes at least one week to get ready. Using the same methodology given here, you can also make pickles for other citrus fruits and vegetables. While making this pickle, you must take every care to take all the precautions mentioned ahead. To get the best results, you must use the same variety of lime mentioned in the ingredients list. Your kitchen is really incomplete without this delicious and tangy lime pickle that’s so easy-to-make and makes your every meal tastier and mouthwatering.

Preparation Time: 30 minutes
Cooking time: 1 minute
Servings: 20

  • 30 to 40 Tahitian or Persian lime
  • 250 gm sea salt


  1. First, you must take a large glass jar with air tight lid.
  2. Wash it thoroughly and let it dry under sun for the whole day.
  3. Once it's devoid of any trace of moisture, we can go ahead with our pickle making process.
  4. Wash all the limes under running water and let them dry in a room.
  5. Make two diagonal cuts on top of each lime till base.
  6. This will divide the lime in 4 pieces which will be connected from the base.
  7. Now take handful of sea salt and thrust it into the cuts.
  8. Pack as much sea salt as you can between the cuts.
  9. Arrange the lime in the base of the jar.
  10. While putting each lime in the jar, make sure you apply the pressure so that no air gap remains between limes.
  11. Pack the jar with tightly trusted limes up to the top.
  12. Now sprinkle some drop of waters on the top and cover with air tight lid.
  13. Water drops will help in starting the pickle making process.
  14. Keep the jar in a cool dark place for 5 days.
  15. Thereafter, keep it in direct sunlight for 2 days.
  16. Now it's ready to be consumed. You can have it with general meals.
