Black Beans Rice Salad With Walnuts And JalapenosGenerally, rice is not included in a salad preparation. The following recipe not only uses rice but also blends it with other interesting ingredients to make a unique combination that's as good as the main course. You must take short unpolished rice for this salad and just soak it overnight to get the best results. Although I've only added walnuts to this recipe, you can make it richer and crunchy by adding shredded or salted almonds. I've also added fresh Mexican jalapenos to this recipe. This adds some spice to the salad. You can also use boiled red beans instead of black beans for this salad. This recipe goes very well with hot stews and other meat preparations having thick and spicy gravy.

Nutty black bean rice salad

Treat yourself and your family members with this unique and delicious salad made from black beans and rice and completed with nuts and select flavoring agents.

Preparation Time: 30 minutes
Cooking time: 35 minutes
Servings: 4

  • 200 gm short unpolished rice
  • 100 gm walnuts
  • 1/4 cup diced carrots
  • 4 to 5 jalapenos
  • 100 gm black beans
  • 1/4 tsp black pepper powder
  • 1/4 tsp dried herbs
  • 5 tsp extra virgin olive oil
  • pinch of salt
  • chopped parsley
  • few drops of white vinegar


  1. Soak rice in a bowl for at least 15 minutes.
  2. Add 1/2 tsp salt in 500 ml water and soak black beans for overnight.
  3. Pressure cook black beans in water for about 5 minutes.
  4. Rinse extra water and keep the beans aside.
  5. Steam soaked rice for about 15 minutes and saute them slightly in olive oil along with the black beans.
  6. Steam diced carrots for about 5 minutes and stir fry them in olive oil.
  7. Take a large salad bowl and add rice and black beans to it.
  8. Crush walnuts into small pieces.
  9. Chop jalapenos and saute them in olive oil for about 2 minutes.
  10. Add dried herbs and black pepper powder to vinegar.
  11. Add carrots, crushed walnuts and jalapenos to the rice and black bean mixture.
  12. Add the vinegar dressing on top and mix well.
  13. Add a pinch of salt and garnish with chopped parsley.
