Ingredients:
- 4 cups wheat flour
- 1 egg
- pinch of baking soda
- 3 tbsp extra virgin olive oil
- 300 gm spinach (washed and chopped)
- 200 gm button mushrooms
- 2 big tomatoes (ripe)
- 300 gm mozzarella cheese
- 1/2 tsp black pepper
- 1 tsp mixed dried herbs (thyme, oregano, rosemary)
- salt to taste
Instructions:
- Add baking soda, egg, 2 tbsp olive oil and salt to the flour.
- Make dough and cover it with wet muslin cloth. Keep aside for 15 minutes.
- Heat 1 tbsp olive oil in a pan and add mushrooms and spinach to it.
- Saute for half a minute and remove from the flame.
- Add black pepper and pinch of salt to the lightly fried vegetables.
- Create a large pizza base and make a layer of melted mozzarella cheese.
- Cut tomatoes in thin round slices.
- Arrange tomatoes, mushrooms and spinach leaves on the cheese layer.
- Sprinkle dried herbs on top of it.
- Grease the baking tray with olive oil and arrange pizza on it with a large spatula.
- Preheat the oven at 180 degrees and bake the pizza for about 10-12 minutes.
- Cut it into equal pieces and serve hot.
