In case, these two fishes are not available in your area, you can use any fresh water fish. Whenever you're grilling a fish, make sure the flame is not too high else it will spoil the entire recipe. A perfectly grilled fish is tender and well cooked from inside but firm and crispy from outside. We're taking chips as a combination with this recipe. You can also add a spicy dipping to make it more delicious and fulfilling. So let's get started and make this quick recipe with some aromatic herbs and freshly prepared chips.

Mild flavored grilled fish fillets

Prepare your taste buds to enjoy this exotic grilled fish recipe which includes red snapper fillets and crisp potato chips to fulfill your cravings and tummy.

Servings: 4

  • 900 gm red snapper or rainbow trout fillet
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp coarsely ground black pepper
  • 1/2 tsp dried fennel seeds
  • small bunch of coriander leaves (finely chopped)
  • 1 tbsp lime juice
  • 4 tsp extra virgin olive oil
  • 4 medium sized potatoes
  • salt to taste
  • vegetable oil for deep frying


  1. Peel and slice potatoes in thin slices and wash them in fresh water.
  2. Heat oil in a deep pan at high flame.
  3. Fry chips at medium flame till light brown.
  4. Put all the chips on a tissue paper to soak extra oil.
  5. Apply lemon, salt and dried herbs on the fish and keep aside for 10 minutes.
  6. Prepare the charcoal grill with medium heat.
  7. Apply olive oil on fish and grill it on both sides till done.
  8. Sprinkle pepper powder and chopped coriander.
  9. Serve with chips and your favorite dip.
