Fried Chicken and Veggie RiceDeep fried chicken served with vegetable rice is a rare combination. This chicken recipe is my inspiration driven from a combination of 2-3 chicken recipes. It has a touch of traditional biryani and fried chicken. The rice is an inspiration from veg-pulao. The difference is that it has no spices, the pulao would otherwise have. Over all, this delicious dinner combination is healthy and delicious. The cooking requires a little more patience and it needs a bit of stirring and frying. Instead of deep frying, you can opt for baking or roasting all the chicken legs. You can use the same ingredients for preparing this recipe with duck or quails. So let's make this popular combination that is irresistible and extremely tasty.

Vegetable rice with crisp fried chicken

Taste this delicious combination of vegetable rice and crisp deep fried chicken made with whole spices and herbs to give a pungent and irresistible flavor.

Preparation Time: 20 minutes
Cooking time: 40 minutes
Servings: 5

  • 2 cups basmati rice
  • 1 kg chicken thighs
  • 1-1/2 cups mixed vegetables (diced)
  • 2 big tomatoes
  • 4 medium sized onions
  • 1/2" ginger piece
  • 5 green chilies (finely chopped)
  • 1 garlic clove
  • 1 tbsp coriander powder
  • 2 tbsp chicken curry powder (available in super stores)
  • 5 black cardamoms
  • 2 bay leaves
  • 8 whole black pepper seeds
  • 4 cloves
  • 1/2 tsp cumin seeds
  • 2 tbsp paprika
  • 1/4 cup corn oil
  • salt to taste


1. Finely chop tomatoes and keep them aside.
2. Slice onions in fine circles.
3. Grind garlic and ginger into a paste.

Note: You can cook rice and chicken simultaneously to save time.

To prepare chicken:

4. Add oil to the pan. (Leave about 2tbsp behind)
5. Saute onion rings until dark brown. Take out onion rings and leave aside.
6. In the same oil, add whole spices and fry for 2 minutes.
7. Add ginger-garlic paste and fry for 5 minutes till all the ingredients turn dark brown.
8. Add coriander powder, chicken curry masala, paprika, and salt.
9. Add green chilies and stir briskly.
10. Add chicken and fry for 10 minutes or till the chicken is tender.
11. Add tomatoes and cook until chicken is cooked and dry.
12. Garnish cooked chicken with fried onion rings.

To prepare rice:

13. In a separate pan add oil and heat it.
14. Add cumin seeds and salt, fry for 2 minutes.
15. Add veggies and fry for another 2-3 minutes.
16. Add rice and water. (Just enough water to cook rice.)
17. Occasionally stir rice before the water runs dry.

Serving Tip: Serve chicken and rice in same plate with fresh onion rings and slices of lime.
