Vegetable clear soup is one of the healthiest options to rejuvenate your digestive tract. For the soup base, you can either go for light vegetable stock (preferred) or can opt for low-sodium chicken broth. Bok Choy is mandatory for this soup, so try not to substitute it with something else. But yes, you can definitely opt for a local mushroom variety. Though I love rich and creamy soups, this clear soup is also among my favorites. If you prefer, you can add some sesame oil to the soup to add a bit of sharpness. This is one of the best ways to make your kids eat broccoli which they generally try to avoid. So, let's quickly make this delicious, light, and fulfilling clear soup preparation for our loved ones and friends.

Do try this fulfilling and nutritious soup which includes Bok Choy, broccoli, and mushrooms with a light seasoning for a subtle yet irresistible flavor.

Cooking time: 12 minutes
Servings: 4

Ingredients:
  • 3 to 4 baby Bok Choy (chopped)
  • 1 cup broccoli (chopped)
  • 1/2 cup shiitake mushroom
  • 1/3 cup carrot (diced)
  • 1/2 tsp white butter (unsalted)
  • 7 to 8 cups light vegetable stock
  • 1/2 tsp ginger juice
  • 1 tsp white onion juice
  • few drops of sesame oil (optional)
  • 4 tsp lime juice
  • salt to taste

Instructions:

  1. Heat butter in a stock pot on a medium flame.
  2. Add Bok Choy, broccoli, shiitake mushroom, and carrot to the pot.
  3. Saute for about 2 to 3 minutes.
  4. Add light vegetable stock and season with salt.
  5. Simmer for about 5 minutes.
  6. Add ginger juice, white onion juice, sesame oil, and lime juice to the pot.
  7. Once stir well and simmer again for 5 minutes.
  8. Serve hot.
