It's time to take care of our sweet tooth by making these delicious crepes stuffed with an equally awesome cheese filling. Although there are different types of filling one can use for this recipe, we'll try to keep the original one. These mouthwatering crepes can be served in two different ways. Either, as it is, immediately after completion or after refrigerating them for a day or two. I prefer the latter option. Feel free to serve these stuffed crepes with lightly caramelized fresh fruits or with a large scoop of your favorite ice cream. The extent to which you cook the crepes can change the texture and flavor of this recipe. So, let's get started and make this fulfilling and creamy dessert for our near ones and fast friends.

Cheese Blintzes Recipe

Do make these creamy and mouthwatering crepes which are stuffed with delicious cheese cream and few other flavoring agents making a nice and soft filling.

Preparation Time: 30 minutes
Cooking time: 30 minutes
Servings: 6 to 8 crepes

Ingredients:
    Crepe Ingredients
  • 1-1/4 cup all-purpose wheat flour
  • 3 medium-sized eggs
  • 75 gm unsalted butter (melted)
  • 1 cup milk
  • pinch of salt
  • Filling Ingredients
  • 125 gm cream cheese
  • 1-3/4 cup ricotta or cottage cheese (crumbled)
  • 1/3 cup castor sugar
  • 1/2 tsp vanilla extract
  • 3 egg yolks
  • 1 tsp lemon zest
  • Add-ons
  • 4 to 5 tsp salted chocolate caramel (melted)
  • 1/4 cup icing sugar or powdered castor sugar
  • few scoops of cream cheese (whipped)

Instructions:

  1. Add all the crepe ingredients in a food processor and blend until you get a crepe batter base with a smooth consistency.
  2. Take a large bowl and add all the filling ingredients in it.
  3. With a large spatula, beat and whip till all the ingredients are mixed well and you get a smooth filling base.
  4. Heat a large nonstick skillet on a medium flame.
  5. Brush it lightly with melted butter.
  6. Pour 4 tsp of crepe batter in a skillet and spread it across the entire base by tilting the skillet in a round fashion.
  7. Cook until the crepe base turns light golden brown.
  8. Through a wooden spatula, flip the crepe and cook for another half a minute.
  9. Repeat this process for making all the crepes.
  10. Now, one by one, place each crepe on a flat surface and place a scoopful of cheese filling in the center.
  11. Fold it gently in the same way you do for spring rolls or veggie rolls.
  12. Stack all the cheese filled crepes in a bowl and refrigerate for at least 24 hours.
  13. While serving, start with drizzling the plate base with melted chocolate caramel.
  14. Place the crepes on the plate and dust them with icing sugar through a fine mesh.
  15. Complete the serving with a bowl of whipped cream cheese.
  16. Serve immediately.
