This savory and delicious grilled chicken preparation can be made quickly in a few easy steps. You need boneless chicken thighs to get the best results. If you prefer chicken breast, you can use that too. Similarly, the quotient of spice can be experimented with. It goes really well with a piping hot bowl of rice and a platter of fresh salad. This much popular South-East Asian preparation has different versions and each one tastes equally good. I've made slight changes in the ingredients list to make it zingy. If you're a vegetarian, you can easily replace chicken with cottage cheese or tofu cubes. So, let's get started and quickly make this flavorful, juicy and scrumptious lemongrass grilled chicken for our loved ones.

Lemongrass Grilled Chicken

Do try this spicy and flavorful grilled chicken enhanced with fresh lemongrass and select spices which induce a unique aroma and taste within chicken chunks.

Ingredients:
  • 600 gm boneless chicken thighs
  • 4 stalks of lemongrass (white part finely minced)
  • 3 garlic cloves paste
  • 1/2" ginger piece paste
  • 1 tsp sugar
  • 1/2 tsp chili flakes (optional)
  • 2 tsp dark soy sauce
  • 1 tsp fish sauce
  • pinch of cracked black pepper
  • tomato slices & coriander leaves (for garnish)
  • bed of lettuce (for serving plate)
  • 3 tsp canola oil

Instructions:

  1. Take a large bowl and add minced lemongrass, garlic paste, ginger paste, sugar, chili flakes, soy sauce, fish sauce, black pepper and canola oil.
  2. Mix it briskly with a spoon till the sugar is completely dissolved.
  3. Add chicken thighs in the bowl and apply the marinade covering them completely.
  4. Keep aside for atleast half an hour.
  5. Preheat your grill at 75 °C.
  6. Sear marinated chicken for 4 minutes on each side.
  7. Transfer to the serving plate having a base of lettuce leaves.
  8. Garnish with tomato slices and coriander sprigs.
  9. Serve hot.
