These delicious fritters made with zucchini and dill are perfect tea time companians. Feel free to add your favorite condiments to enhance the flavor of these fritters. Though grated zucchini is the way to go, you can also use thin slices of the same. It can also be prepared for breakfast in a fairly quick time. Mint dip is what I prefer with these fritters but you can serve your preferred sauce or dip. This is the only way my kids consume zucchini so I make these fritters almost every fortnight in the season. To get the best results, make sure you've removed excess water from the grated zucchini. It's time to make these mouth-watering and fulfilling fritters made with fresh zucchini and dill for our loved ones.

Zucchini and Dill Fritter with Mint Cream Dip

Zucchini fritter

Relish these delicious zucchini and dill fritters enhanced with crumbled feta cheese and select spices which gives it an irresistible taste and texture.

Preparation Time: 30 minutes
Cooking time: 15 minutes
Servings: 10 fritters

Ingredients:
  • 4 medium-sized zucchini
  • 2 medium-sized eggs (whipped)
  • 1 cup crumbled feta cheese
  • 2 garlic cloves (finely minced)
  • 3 tsp dill (finely minced)
  • 1/2 tsp onion powder
  • fresh cracked black pepper (to taste)
  • 1 cup all purpose flour
  • 1/2 tsp baking powder
  • pinch of sweet paprika
  • 1 cup fresh cream (whipped)
  • 10 to 12 fresh mint leaves (coarsely chopped)
  • 1 tsp lemon juice
  • ground white pepper (to taste)
  • baby spinach and tomatoes (for garnish)
  • olive oil for shallow frying
  • salt to taste

Instructions:

  1. Take a large bowl and add whipped cream in it.
  2. Follow it with chopped mint leaves, lemon juice, white pepper and salt.
  3. Briskly whip with a spatula for about a minute and keep aside.
  4. Grate zucchini and transfer to a fine mesh strainer.
  5. Sprinkle salt on top and leave it for about 5 to 10 minutes.
  6. Squeeze out all the water from the grated zucchini with your hands and transfer to a large bowl.
  7. Add eggs, crumbled feta cheese, minced garlic cloves, minced dill, onion powder, cracked black pepper, all purpose flour, baking powder, sweet paprika and salt in it.
  8. Mix well for about 2 minutes either with your hands or with a spatula.
  9. Grease a large nonstick frying pan with generous quantity of olive oil.
  10. Keep the flame at medium and add 2 to 3 spoonfuls of the grated mix in it.
  11. Flatten with a spatula and fry from both the sides till it's golden brown.
  12. Transfer it on a paper towel.
  13. Repeat this process for all the fritters.
  14. Transfer the fritters to a serving plate with a scoopful of mint cream dip.
  15. Garnish with baby spinach leaves, sliced tomatoes and with a sprig of dill.
