This simple and delicious fritter recipe is ideal for tea time snacking. If you prefer fresh shrimps, you can substitute them with the dried ones. And, there is no hard and fast rule to give a specific shape to the fritter. Feel free to make smaller or rounder fritters, if you prefer so. You can either shallow fry or deep fry these fritters. I prefer the former approach which lets me give it a bigger and flatter shape. These flavorful fritters taste best with a bowl of fiery chili sauce. You can also experiment with different combinations of dried herbs or condiments used for flavoring. Use peanut oil for frying these fritters to get the best results. Corn and Shrimp Fritter

Do try these crisp, flavorful and irresistible fritters which are enriched with dried shrimps and loads of fresh corn making it a healthy option for tea time.

Servings: 4

Ingredients:
  • 2 cups fresh corn kernels (parboiled)
  • 2 cups dried shrimps (coarsely chopped)
  • 1/2 tsp smoked paprika
  • 1/3 tsp garlic powder
  • 1/4 tsp ground black pepper
  • 1/2 tsp onion powder
  • few kaffir lime leaves (finely minced)
  • 1 medium-sized egg
  • 1/2 cup flour
  • few coriander sprigs (for garnish)
  • salt to taste
  • peanut oil for shallow frying

Instructions:

  1. Take a large bowl and add corn kernels, chopped shrimps, paprika, garlic powder, ground pepper, onion powder, minced kaffir lime leaves, egg, flour and salt in it.
  2. Mix all the ingredients with your hands.
  3. Heat enough peanut oil in a large nonstick pan on a medium flame.
  4. Make round and flat patties for the fritters.
  5. Gently fry the fritters from both the sides (approx 3 to 4 minutes each side) till they're golden brown.
  6. Garnish with coriander sprigs and serve hot.
