There are literally infinite ways to make an omelette. It all depends on your creativity and your taste. Today, we're going to make an omelette which consists of baby spinach leaves and a generous amount of cheese. Though I've also added tomatoes in it, the primary flavor is of spinach and cheese. The cheese can be substituted with your preferred one. For best results, make sure you blanch spinach leaves before adding in the omelette. Feel free to add a topping of bell pepper julienne before serving this omelette. Use flat nonstick griddle to easily spread and lift these omelettes. Let's quickly make this cheesy and flavorful omelette recipe for our loved ones. Egg whites can also be used for this recipe.

Baby spinach and cheese omelette

Enjoy this delicious omelette recipe which is made with tomatoes, baby spinach leaves and oodles of melted cheese for a truly unique and lip-smacking flavor.

Ingredients:
  • 8 eggs
  • 3/4 cup mozzarella cheese (melted)
  • 2 big ripe tomatoes (chopped)
  • 300 gm baby spinach leaves
  • ground black pepper (to taste)
  • 3 to 4 tsp olive oil
  • salt to taste

Instructions:

  1. Boil water in a sauce pan and bring down the flame to medium.
  2. Wash spinach leaves first under running water and then in a bowl.
  3. Add the leaves in the boiling water and keep them submerged for about 50 seconds.
  4. Drain all the water and coarsely chop the leaves. Keep aside.
  5. Take a large bowl and break all the eggs in it.
  6. Add chopped tomatoes, blanched spinach leaves, black pepper and salt in it.
  7. Whip briskly for about 2 minutes to mix everything well.
  8. On a medium flame, grease a flat nonstick griddle with olive oil.
  9. Spread enough whipped egg on it and spread evenly on the griddle.
  10. After a minute, pour melted mozzarella cheese on top with a spoon.
  11. After 30 seconds, transfer the omelette to the serving plate.
  12. Repeat the same process till whipped egg mix is finished.
  13. You can season it with a spice mix (optional) right before serving.
  14. Serve hot with bread and sauce.
