Grilled fish tastes best when seasoned with moderately sharp and pungent ingredients. Baby trout is a perfect candidate for making such preparations. While preparing the following recipe, use generous quantity of fresh garlic to get the best results. The belly of these baby trout is delicately rubbed with a sharp seasoning of garlic, cumin and paprika while the outer skin is gently seasoned with sea salt. The spicy green sauce topped on each grilled fish is optional. For best results, the seasoning should be applied right before grilling. A drizzle of extra virgin olive oil and a squeeze of lime can add more zing to the servings. Let's quickly grill these delicious and spicy baby trout for our taste buds.

Spicy grilled baby trouts

Do try this mouthwatering baby trout recipe which is grilled on a charcoal fire and is flavored with garlic, cumin and paprika to liven up your taste buds.

Preparation Time: 20 minutes
Cooking time: 10 minutes
Servings: 4

Ingredients:
  • 600 gm baby trout (belly cleaned)
  • 8 to 10 garlic buds
  • 2 tsp cumin seeds
  • 1/2 tsp sweet paprika
  • small bunch of coriander leaves
  • few mint leaves
  • 2 dried whole red chilies
  • 2 garlic buds
  • coriander sprigs (for garnish)
  • 1/2 cup extra virgin olive oil
  • sea salt to taste

Instructions:

  1. Blend 10 garlic buds, cumin seeds, sweet paprika, half of the olive oil and a pinch of salt in a food processor.
  2. Rub this flavorful paste inside the belly of each baby trout.
  3. Rub sea salt on the outer part of each trout and place in a large bowl.
  4. Pour the remaining olive oil on top and once gently mix with your hands.
  5. Keep aside for at least 10 minutes.
  6. Meanwhile, make a coarse paste with coriander leaves, mint leaves, whole red chilies, 2 garlic buds, salt and some water.
  7. Keep this raw and fiery green sauce aside.
  8. Prepare a charcoal grill with a medium flame.
  9. Grill all the baby trout for 5 to 6 minutes on each side.
  10. Take a serving plate and arrange all the grilled trout.
  11. Top it with the fiery green sauce.
  12. Garnish with coriander sprigs and serve immediately.
