I prefer cookies either with a filling or made with multiple add-ons like this one. This is not a classic butter cookie, but an experiment that came out nicely from the oven. It's a perfect tea companion you can make to last up to a week. One can easily moderate the quantity of peanuts and oatmeal used in this recipe if required. Make sure both oatmeal and peanuts are lightly roasted before you add them in the cookie dough. One can also substitute peanuts with almonds or pistachio. These cookies are baked slightly longer than the normal time. For a smoother texture, coarsely grind both peanuts and oatmeal before adding in the dough. Enjoy these delicious butter cookies baked to perfection and enhanced with lightly roasted peanuts and oatmeal for a perfectly crunchy texture and flavor.

Servings: 4 dozen

Ingredients:
  • 3 cups all-purpose wheat flour
  • 1 cup unsalted butter (softened)
  • 1/2 tsp baking powder
  • 2 medium-sized eggs
  • 1 tsp vanilla extract
  • 1/2 tbsp. cocoa powder
  • 1/2 cup brown sugar
  • 3/4 cup castor sugar
  • 1/3 cup oatmeal (lightly dry-roasted)
  • 3/4 cup peanuts (lightly dry-roasted)
  • 1/4 tsp salt

Instructions:

  1. Sift together flour, baking powder and salt.
  2. It a food processor or a mixer bowl, add softened butter, brown sugar and castor sugar.
  3. Pulse at a moderate speed till it turns fluffy and smooth.
  4. Add both the eggs and blend for a minute.
  5. Finally add vanilla extract with cocoa powder.
  6. Pulse for a minute and finish with adding roasted peanuts and oatmeal.
  7. Mix everything with a flat wooden spatula till all the ingredients are combined well.
  8. Scoop out a spoonful of dough for each cookie on a baking sheet keeping some distance between the cookies.
  9. If you prefer, you can press them with a spoon or can tap gently with your palm.
  10. Bake in a preheated oven at 350° F for about 14 minutes.
  11. Let the cookies cool down to the room temperature.
  12. Serve with tea or coffee.
