This hot and spicy chicken preparation is a delicious starter you can prepare in a quick time before your guests knock at the door. Instead of using chicken wings, one can use breasts too. The sauce used in this recipe is quite sharp and delicious. If you find it too fiery, make the necessary changes in the ingredients list. This sauce is always prepared fresh because the refrigerated version tends to lose its original flavor. Before serving, you can garnish it with white sesame seeds. The same recipe can also be prepared with duck meat which is one of my favorites. So, let's get started and quickly make this hot and scrumptious chicken wings recipe flavored generously with spicy ginger and plum sauce.

Chicken wings in hot plum and ginger sauce

Relish this spicy and delicious chicken wing preparation which is cooked with aromatic ginger and plum sauce which gives it a unique texture and flavor.

Cooking time: 25 minutes
Servings: 4

Ingredients:
  • 750 gm chicken wings
  • 100 gm pureed plums
  • 2 tsp rice vinegar
  • 1/4 cup orange juice
  • 20 gm fresh ginger paste
  • 1 tsp sweet chili sauce
  • 1 tsp dark soy sauce
  • 1 tsp castor sugar
  • pinch of Sichuan pepper powder
  • pinch of sweet paprika
  • 1 tsp cornstarch
  • lettuce and radicchio leaves (for garnish)
  • 3 tsp vegetable oil

Instructions:

  1. Apply vegetable oil on all the chicken wings and microwave them on a high setting for about 3 to 5 minutes.
  2. The time duration varies depending on the wattage of the machine.
  3. Take out all the half-done chicken wings from the microwave and keep aside.
  4. Blend pureed plums, rice vinegar, orange juice, ginger paste, sweet chili sauce, dark soy sauce, castor sugar, Sichuan pepper powder, and sweet paprika in a food processor for half a minute.
  5. Transfer it in a nonstick pan on a medium flame.
  6. Continuously stir for about 2 to 3 minutes.
  7. Mix cornstarch in about 1/4 cup of water.
  8. Add the cornstarch liquid in the simmering sauce and continue stirring for a couple of minutes till the sauce reaches the right consistency.
  9. Quickly add half-done chicken wings and toss them in the sauce.
  10. Cover the pan with a lid and simmer on a low flame for about 4 to 5 minutes.
  11. Garnish with lettuce and serve on a bed of radicchio leaves.
