Who doesn't like muffins? I like them fresh and hot but some of my family members prefer to relish them at the room temperature. Today, we're going to make apple and currant muffins with limited numbers of ingredients. If you do not want to include apple in these muffins, you can omit them completely making a simpler version. Similarly, currant can be replaced with local raisin variants. Sometimes, I add caramel syrup in muffins which give a distinct flavor to the recipe. Whether you're making a cake or a muffin preparation, the result depends on how well the ingredients are blended with right proportions. Fluffy apple muffins

Do try these delicious muffins made with apples and currants which are baked to perfection making them a perfect companion of your tea or coffee time.

Preparation Time: 15 minutes
Cooking time: 20 minutes
Servings: 15

Ingredients:
  • 2 cups all-purpose wheat flour
  • 2 medium apples (peeled & coarsely chopped)
  • 1 tsp baking powder
  • 1 cup castor sugar
  • 2 eggs
  • 1/2 cup currants
  • 3/4 cup milk
  • 100 gm unsalted butter (melted)
  • 1 tsp ground cinnamon
  • 1/4 tsp salt

Instructions:

  1. Sift flour, baking powder, ground cinnamon and salt for half a minute.
  2. Whisk milk, eggs, castor sugar and unsalted butter in a bowl for about 4 to 5 minutes.
  3. Pour it in the sifted flour base and blend in a food processor.
  4. Add currants and chopped apples and mix well with a spatula for about 2 to 3 minutes.
  5. Grease paper muffin cases and fill them with the muffin flour base leaving half of the space empty.
  6. Bake in preheated oven at about 175° C for about 15 to 20 minutes.
  7. Serve with hot coffee or tea.
