Today, we're going to make a spicy and slightly changed version of classic Penne arrabbiata recipe. You can easily moderate the amount of chilies to match with your taste. Instead of Penne, one can use spaghetti too. To further enrich this preparation, addition of veggies like broccoli and bell peppers is highly recommended. To get the best results, use ripe cherry tomatoes. Serve it piping hot with added grated cheese. I generally serve it with a glassful of fresh fruit juice, preferably - orange or apple. To increase the number of servings, one can also add grilled shredded chicken in it. So, here we go to quickly make this spicy, delicious and tangy pasta preparation for our loved ones and friends.

Fiery penne pasta with arrabbiata sauce

Relish this spicy and scrumptious penne arrabbiata preparation made with fresh tomatoes and loads of chilies that adds the required zing in this recipe.

Preparation Time: 30 minutes
Cooking time: 15 minutes
Servings: 4

Ingredients:
  • 350 gm Penne pasta
  • 5 fresh red chili peppers (finely minced)
  • 4 garlic cloves (finely chopped)
  • 500 gm cherry tomatoes paste
  • 1 tsp dried herbs
  • 1 medium sized white onion paste
  • 1/4 cup Parmesan cheese
  • 1/2 cup clear vegetable stock
  • few drops of balsamic vinegar
  • ground black pepper (for seasoning)
  • oodles of extra virgin olive oil
  • salt to taste

Instructions:

  1. Heat quarter cup of extra virgin olive oil in a deep nonstick pan.
  2. Add minced red chilies, chopped garlic and white onion paste in the pan.
  3. Saute for about 2 minutes on a medium flame.
  4. Add tomato paste with clear vegetable stock and season with dried herbs, drops of balsamic vinegar, ground black pepper and salt.
  5. Gently stir and simmer for about 15 minutes till the sauce reaches right consistency.
  6. Boil pasta in salted water for about 5 minutes and drain all the water.
  7. Add pasta and grated Parmesan cheese in the sauce and stir for about 2 minutes before switching off the flame.
  8. Serve hot with your favorite beverage.
