It's time to make a fish preparation with a creamy sauce. Salmon patties can be made in different ways and this one is different from what I've tried earlier. The saffron cream sauce enhances the flavor of the patties by many folds. I've kept the flavor quite mild which can be moderated as per your taste. You can either bake or shallow fry these patties. Instead of salmon, you can also use any other white meat. You cannot keep it in refrigerated form so make sure you cook it fresh and in limited quantity. If you have limited time, instead of going for the patties, use plain fish fillets and season them with your favorite ingredients. So, grab your frying pan and get ready to make this exotic salmon patty preparation.

Tender salmon patties in exotic saffron sauce

Savor these flavor packed salmon patties which are served with delicious saffron and cream sauce which makes the entire preparation, a divine serving.

Preparation Time: 35 minutes
Cooking time: 30 minutes
Servings: 5

Ingredients:
  • 400 gm salmon fillet meat
  • 3/4 cup breadcrumbs
  • 1/2 tsp ground pepper
  • 1 tsp Dill (finely chopped)
  • pinch of paprika
  • 1 egg (whipped)
  • 50 gm white onion paste
  • 1/4 tsp saffron strands
  • 2 tsp milk
  • 1/2 cup fresh cream (whipped)
  • 1/4 tsp garlic powder
  • 1 tsp butter
  • pinch of white pepper powder
  • 1/4 cup fish stock
  • vegetable oil for shallow frying
  • salt to taste

Instructions:

  1. Microwave salmon fillet meat on a high setting for about 2 minutes.
  2. Take a large bowl and crumble salmon meat in it.
  3. Add breadcrumbs, ground pepper, chopped Dill, paprika, whipped egg, white onion paste and salt in it.
  4. Gently mix with your hands ensuring salmon meat is not mashed completely.
  5. Make patties in your desired shape and size and refrigerate for about 15 minutes.
  6. Heat vegetable oil in a frying pan on a medium flame.
  7. Shallow fry all the salmon patties till they turn light golden brown.
  8. Place on a paper towel to remove excess oil.
  9. Mix saffron strands in the milk and keep aside.
  10. Melt butter in a nonstick pan on a medium flame.
  11. Add garlic powder with fish stock in it and continuously stir for about 2 minutes.
  12. Add fresh whipped cream, white pepper powder and salt.
  13. Add the saffron infused milk as well.
  14. Gently stir while simmering the sauce till it is reduced and reaches the right consistency.
  15. Place salmon patties on the serving plate and pour delicious saffron and cream sauce on top.
  16. Serve with fried or boiled rice.
