Let's make a sweet delight for our evening tea time. Though biscotto is of Italian origin, it is now quite popular around the world. Authentic biscotto preparation is generally made with flaked almonds and flour base. I've made this biscotto with generous quantity of pistachios. If you're making it for the first time, pay attention on the baking time to get the best results. You can innovate and can add more dry fruits in this preparation to get a nuttier flavor with colorful texture. If you have a traditional wood fire oven, nothing can be better than that. You can store these biscotti for up to a week. Let's prepare our oven and make this delicious sweet preparation for our loved ones and close friends.

Nutty and soft pistachio biscotto

Try these delicious and crunchy biscotti preparation loaded with generous amount of crushed pistachios which gives it a nutty as well as a unique flavor.

Preparation Time: 20 minutes
Cooking time: 40 minutes
Servings: 20

Ingredients:
  • 2 cups all purpose wheat flour
  • 100 gm unsalted butter
  • 1/3 cup crushed pistachios
  • 1/4 cup powdered pistachios
  • 1/4 cup sugar syrup
  • 1 tsp baking powder
  • 4 eggs
  • 1/2 cup caster sugar
  • 1 tsp brown sugar
  • few cherries or red grapes (semi-dried)
  • pinch of salt

Instructions:

  1. Take a large bowl and add caster sugar, brown sugar and eggs in it.
  2. Stir for about 3 to 4 minutes and add baking powder with salt.
  3. Stir again for a minute.
  4. Add unsalted butter, wheat flour, and powdered pistachios and mix well till nice cookie dough is formed.
  5. Make small cookie rolls from the dough and flatten them a bit. Make a hole in between with your thumb.
  6. Grease a cookie sheet and place all biscotti on it.
  7. Bake in preheated oven at 180 degrees for about 25 minutes.
  8. Take out all the cookies and brush them with the sugar syrup.
  9. Roll on the crushed pistachios layer so that a layer is formed on the cookies.
  10. Add few drops of sugar syrup in the hole and gently place a half cut cherry or grape in it.
  11. Again bake in the oven for about 10 minutes.
  12. Bring down to room temperature and serve with tea or coffee.
