Caramelized Sweet Potatoes

It's time to make something unique which I've never made before. How about sweetening sweet potatoes with a glaze? That's what I've done with the following recipe. It is a perfect serving for tea time and can be prepared quite easily with few ingredients. To start with, make sure you're picking firm and fresh sweet potatoes to get the best results. If you're diabetic, I'll strongly advice to skip this one. While making this recipe, do take care as you slice the potato wedges. If they're too thin, they will break and get mashed before you start to caramelize them. You can make minor changes in the ingredients to slightly change the overall flavor. Here we go to make this tasty delight made from sweet potatoes.

Try out these delicious sweet potatoes preparation which are caramelized to perfection with select flavoring agents which gives them a pungent flavor.

Preparation Time: 20 minutes
Cooking time: 25 minutes
Servings: 6

Ingredients:
  • 500 gm sweet potatoes (nice and firm)
  • 80 gm brown sugar
  • 50 gm caster sugar
  • 1/4 tsp cinnamon powder
  • pinch of rock salt (powdered)
  • 3 tsp extra virgin olive oil

Instructions:

  1. Peel and wash all the sweet potatoes under running water.
  2. Cut them in at least 2" thick slices.
  3. Heat olive oil in a heave base skillet on a medium flame.
  4. Add all the chopped sweet potatoes pieces and gently saute for about 4 to 5 minutes with a wooden spatula.
  5. Add cinnamon powder with a pinch of powdered rock salt and continue stir frying for about 2 minutes.
  6. Now slide and arrange all the potato pieces on the side of the pan in a ring.
  7. Add brown sugar and caster sugar in the middle and gently stir while they melt.
  8. Once both sugar variants melt down completely, mix the pieces and continue the process till all of them are coated with caramelized sugar.
  9. Make sure to keep the flame to medium during the caramelization process.
  10. Bring down to the room temperature and serve immediately. You can refrigerate too for half an hour before serving.
