If you're not familiar with the name, let me tell you that mie goreng is Indonesian fried noodles recipe. I'll make the simplified version of this preparation removing chicken or seafood generally included in these noodles. Though egg noodles go well with this recipe, one can use instant noodles too. The sweet soy sauce used in the preparation is easily available in super stores. Number of servings can be increased by adding peas or broccoli in it. To get the authentic flavor, use traditional Chinese wok. Instead of fried egg, poached eggs can also be used. I often make this recipe in breakfast as it can be prepared in quick time. Spicy mie goreng noodles with fried eggs

Make this spicy and delicious fried noodles recipe seasoned with spices and sweet soy sauce and topped with hot fried eggs to fulfill your hungry tummy.

Preparation Time: 10 minutes
Cooking time: 20 minutes
Servings: 3

Ingredients:
  • 3 packets egg noodles
  • 3 eggs
  • 3 tsp sweet soy sauce (Indonesian kecap manis)
  • 2 garlic cloves (finely minced)
  • 1/5 tsp black pepper powder
  • 1 red chili pepper paste
  • 1 tsp oyster sauce
  • 1 small onion paste
  • 1/2" ginger piece paste
  • 3 tsp peanut oil
  • salt to taste

Instructions:

  1. Add a pinch of salt in 1 liter water and bring it to a boil.
  2. Switch the flame to medium and add egg noodles in it.
  3. Gently stir for about 5 minutes and switch off the flame.
  4. Drain all the water and keep the noodles aside.
  5. Heat 2 tsp peanut oil in a wok.
  6. Add minced garlic and ginger paste and saute for a minute.
  7. Add onion paste and stir fry till it turns light pink.
  8. Add noodles and once toss gently.
  9. Add sweet soy sauce, black pepper powder, red chili paste, oyster sauce and salt in it.
  10. Saute and toss gently for about 4 to 5 minutes.
  11. Bring down from the flame and again add 1 tsp peanut oil in the wok.
  12. Break all the eggs in a bowl and whisk it for a few seconds with a pinch of salt.
  13. Add in the wok and quickly fry from both the sides.
  14. Place fried eggs on top of mie goreng and serve hot.
