I often use eggplants in pizza topping. Today we're using them in again in a pizza. While making it, make sure your eggplant pizza crust is slightly thicker than the normal one. Use very thin slices of eggplants to make this pizza. You can also make fried eggplant pizza instead of using them raw. Use ripe and sweet tomatoes to get the best results. Eggplants can become soggy if kept for long time within topping, so make sure you make and consume this pizza fresh. Instead of eggplants, you can also use zucchini or potatoes. Use large round eggplants instead of using the long variants. So get ready and prepare your pizza baking oven to make this delicious, nutritious and easy-to-make eggplant pizza recipe.

Make this fulfilling and delicious pizza loaded with scrumptious eggplant slices, chili sauce and loads of cheese gratings to satisfy your taste buds and tummy.

Cooking time: 15 minutes
Servings: 6

Ingredients:
  • 2 cups self raising flour
  • 1/4 tsp dry yeast powder
  • 1 tsp sugar
  • 2 big eggplants (thinly sliced)
  • 2 big tomatoes (sliced)
  • 200 gm tomato sauce
  • 2 tsp chili sauce
  • 1/2 cup feta cheese (crumbled)
  • 3/4 cup Mozzarella cheese (grated)
  • 1/4 tsp fresh ground pepper
  • 1 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Mix dry yeast powder in 3 to 4 tsp of water and stir for a minute.
  2. Add yeast liquid, sugar, olive oil and salt in the flour and sift it well.
  3. Add water and slowly knead the flour into soft pizza dough.
  4. Keep it aside for 15 minutes.
  5. Grease pizza baking tray and roll the dough into pizza base.
  6. Arrange it in the baking tray and spread a layer of tomato sauce.
  7. Carefully arrange both eggplants and tomato slices above it.
  8. Drizzle chili sauce on top of it and season with ground pepper and salt.
  9. Spread grated Mozzarella cheese above it.
  10. Finish the topping with crumbled feta cheese.
  11. Bake in a preheated oven at 200 degrees for about 12 minutes.
  12. Cut and serve hot with your favorite beverage.
