Crisp Golden Sand Prawns

Salted egg yolks were always my favorite and I often use it in my recipes. Today, I'm going to gel them with crisp fried prawns coated with a delicious batter. If you do not prefer deep frying these prawns, you can shallow fry them in a nonstick pan. You can make this recipe in different ways by making slight variations in the ingredients list. Leftovers of this recipe can be coarsely chopped and can be stuffed in sandwiches. Calamari can also be made in a similar way. I generally serve such prawns with creamy and spicy dip. Use seasonal prawns for this recipe but make sure they're fresh. So let's make these delicious and crispy prawns with select ingredients to give surprise to our loved ones.

Crispy golden sand prawns in a plate

Crispy and flavorful deep fried prawns coated with an equally scrumptious batter consisting salted egg yolks.

Preparation Time: 30 minutes
Cooking time: 20 minutes
Servings: 4

Ingredients:
  • 10 large prawns (deveined)
  • 2 to 3 salted egg yolks
  • 1 tsp oyster sauce
  • 4 tsp evaporated milk
  • 1/5 tsp sesame oil
  • 1/4 tsp fresh ground pepper
  • 50 gm unsalted butter
  • 2 tsp corn flour
  • 1 egg (whipped)
  • 100 gm carrot julienne (for garnish)
  • 2 to 3 coriander sprigs (for garnish)
  • peanut oil for frying
  • 1 tsp sugar
  • salt to taste

Instructions:

  1. Take all the prawns in a bowl and add oyster sauce, sesame oil, ground pepper, corn flour, whipped egg, 1/2 tsp sugar and a pinch of salt in it.
  2. Mix all the ingredients well and keep the prawns aside in this marinade for at least 15 minutes.
  3. Heat peanut oil in a deep frying pan.
  4. Deep fry all the marinated prawns till they turn crisp.
  5. Steam both the salted egg yolks for 8 minutes.
  6. Break them coarsely and keep aside.
  7. Heat 2 tsp peanut oil in a frying pan.
  8. Add unsalted butter in it and let it melt down completely.
  9. Add coarsely crumbled egg yolks and stir gently.
  10. After a minute, add evaporated milk and stir for another minute.
  11. Finally, add fried prawns with 1/2 tsp sugar and a pinch of salt.
  12. Gently stir and coat the golden sand egg yolk batter on the crisp fried prawns.
  13. Arrange a bed of carrot julienne on the serving plate.
  14. Place hot and delicious golden sand prawns on top of it.
  15. Garnish with coriander sprigs and serve immediately.
