The accompanying salad is made with red onions, pomegranate and flavored freekeh grains. If freekeh is not available on your locality, you can omit it altogether. Similarly, you can make changes in the ingredients used for seasoning quail legs. Like freekeh, it is possible that you may struggle to find quail. In that case, you can use chicken legs. Leftovers of this recipe can be shredded and can be mixed in a spicy stew. So, let's get started and prepare our charcoal based grill to make these yummy quail legs for our family and friends.

Grilled spicy quail legs

Make this grilled quail leg recipe that’s cooked on a charcoal fire and seasoned with mild spices to give you an awesome flavor for tantalizing taste buds.

Preparation Time: 15 minutes
Cooking time: 30 minutes
Servings: 4

Ingredients:
  • 8 quail legs
  • 1/2 cup freekeh
  • 1 big onion (finely chopped)
  • 1/2 cup fresh pomegranate seeds
  • few cilantro sprigs (coarsely chopped)
  • 1/4 cup lime juice
  • pinch of white pepper powder
  • few drops of malt vinegar (optional)
  • pinch of sugar
  • 3 to 4 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. You can either marinate quail legs as it is or can make deep cuts to let the marinade go inside.
  2. Take a bowl and add lime juice, white pepper powder, malt vinegar, sugar, olive oil and a pinch of salt in it.
  3. Whip it with a spoon for 2 to 3 minutes.
  4. Pour this tangy marinade over quail legs and rub well on every side.
  5. Cover the marinated quail legs bowl with aluminum foil and keep aside for 15 minutes.
  6. Meanwhile boil half a liter of water on a medium flame.
  7. Add freekeh grains in it and simmer for about 15 minutes with a covered lid.
  8. Drain all the water and keep the grains aside.
  9. Prepare your charcoal grill with maximum heat.
  10. Grill all the marinated quail legs till done (approx. 10 minutes).
  11. Mix freekeh grains, chopped red onions, pomegranate seeds, cilantro sprigs and a pinch of salt in a bowl.
  12. Toss the salad ingredients well.
  13. Place generous amount of salad bed on the serving plate.
  14. Top it with grilled quail leg and serve immediately.
