I simply love the combination of baby corn and tofu. And, whenever both these eatables are combined with seasoned and stir fried veggies, they simply taste heavenly. I've included generous amount of fresh garlic in this recipe to give it a nice and yummy flavor. If you don't like garlic, you can omit it. Needless to say, use of fresh homemade tofu is always recommended though you can use the packed version too. You can make slight changes in the seasoning ingredients quantities to balance the flavor as per your preferences. To get the best results, stir fry the veggies on a high flame in a traditional Chinese wok. So, let's quickly make this sharp and delicious recipe for our family members.

Stir fried veggies with tofu and baby corn

Enjoy this tangy and delicious preparation consisting of stir fried veggies enhanced with tender baby corns and loads of fresh tofu dices for added flavor.

Preparation Time: 30 minutes
Cooking time: 20 minutes
Servings: 4

Ingredients:
  • 250 gm tofu (diced or sliced)
  • 250 gm baby corn (parboiled)
  • 1 Chinese cabbage (coarsely chopped)
  • 1 red bell pepper (cut in dices)
  • 1 spring onion (coarsely chopped)
  • 1/2 cup mushrooms (diced)
  • 8 to 10 garlic cloves paste
  • 1 tsp dark soy sauce
  • 1/2 tsp oyster sauce
  • few drops of sesame oil
  • pinch of cayenne pepper powder
  • 1 green chili (finely minced)
  • 2 tsp peanut oil
  • salt to taste

Instructions:

  1. Heat peanut oil in a large wok on a medium flame.
  2. Add garlic paste and stir fry for about a minute.
  3. Add minced green chilies and toss for half a minute.
  4. Start with adding tofu slices and stir fry for about 2 to 3 minutes.
  5. Follow it with baby corn and add cayenne pepper with sesame oil.
  6. Saute for a minute and finally add cabbage, bell pepper, spring onion and mushrooms.
  7. Season with soy sauce, oyster sauce and salt.
  8. Toss and stir fry for about 3 to 4 minutes on a high flame.
  9. If required, you can optionally add some prawns too in it.
  10. Serve hot with a spicy dip or sauce.
