Addition of bell peppers and scrambled eggs elevates the overall flavor of this recipe. If possible, use classic Thai curry powder instead of using a local variant. If you do not prefer spicy noodles, reduce the amount of curry powder used in this recipe. Alternatively, you can add some sugar in these noodles while tossing them in the wok. Spicy egg noodles with hot curry powder

Savor this spicy and fiery egg noodles preparation which is flavored with bell peppers and loads of hot curry powder and is enhanced with fragrant herbs.

Ingredients:
  • 200 gm thick egg noodles
  • 1/2 cup tomato sauce
  • 1 egg (whipped)
  • 1/2 cup red and green bell peppers (chopped in strips)
  • 1 tsp classic curry powder
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/2 tsp soy sauce
  • 1 tsp lime juice
  • 2 tsp peanut oil
  • salt to taste

Instructions:

  1. Add 1/4 tsp salt in a liter of water and bring it to a boil.
  2. Lower the flame to medium and add noodles.
  3. Gently stir it for about 6 minutes.
  4. Drain all the water and keep the noodles aside.
  5. Heat peanut oil in a wok.
  6. Add tomato sauce with onion and garlic powder.
  7. Simmer for about 5 minutes.
  8. Add bell pepper strips and toss for about a minute.
  9. Add whipped egg and quickly stir fry for about half a minute.
  10. Add noodles and season with curry powder, soy sauce, lime juice and salt.
  11. Toss and saute for about 5 to 6 minutes.
  12. Serve hot with hot cup of coffee.
