Nutritious chickpea and tomato salad

Enjoy this tangy and delicious salad bowl consisting of fresh cherry tomatoes, protein packed chickpeas and loads of fresh cucumber slices with cilantro.

Preparation Time: 20 minutes
Cooking time: 20 minutes
Servings: 5

Ingredients:
  • 1 cup chickpeas (soaked overnight)
  • 500 gm cherry tomatoes (sliced in halves)
  • 400 gm cucumber (sliced or diced)
  • small bunch of coriander leaves (chopped)
  • 1 tsp lime juice
  • oodles of extra virgin olive oil
  • pinch of salt

Instructions:

  1. Pressure cook chickpeas for about 20 minutes in about a liter of water.
  2. Drain all the water and keep the chickpeas aside.
  3. Take a big salad bowl and add chickpeas, tomatoes and cucumber in it.
  4. Sprinkle salt in it and toss well.
  5. Add generous amount of extra virgin olive oil with lime juice and chopped coriander leaves.
  6. Mix gently with a wooden spatula and toss well.
  7. Serve with your main course entry.
