Tagine preparations are quite common in Moroccan and Lebanese cuisine. It's cooked in a unique cooking pot you can avail from a super store. I've used the combination of lemon and apricot to give a unique taste to this chicken recipe. It's mild on spices which can be changed as per your preferences. Use coal based (hard coke or wood based coal) cooker to make this tagine for enjoying the authentic taste. One can easily replace chicken with local vegetables to make the vegetarian version of the same. Some of my family members prefer to sprinkle red chili flakes on top before digging into this one. So, without wasting any time, let's quickly make this scrumptious and irresistible chicken recipe.

Delicious tagine with apricot and lemon

Do make this delicious tagine preparation with chicken and apricots on a low heat and flavor it with delicious ingredients and spices for an irresistible taste.

Preparation Time: 30 minutes
Cooking time: 1 hour
Servings: 4

Ingredients:
  • 2 pounds chicken (chopped)
  • 1 cup rice (soaked for an hour)
  • 1 medium sized white onion (sliced)
  • 1 lemon slices
  • 1 or 2 apricot (sliced)
  • 25 gm ginger (finely minced)
  • 25 gm garlic cloves (finely minced)
  • 2 to 4 green olives (cut in halves)
  • pinch of black pepper
  • 1/4 tsp dried herbs
  • lettuce (for garnish)
  • oodles of extra virgin olive oil
  • rock salt for seasoning

Instructions:

  1. Parboil rice in a liter of water for about 3 minutes.
  2. Drain all the water and keep the rice aside.
  3. Pour generous amount of olive oil in the tagine base.
  4. Add sliced white onion, lemon slices, ginger, garlic and green olives in it.
  5. Arrange a layer of parboiled rice above it.
  6. Put chicken and apricot pieces above it and season with black pepper, dried herbs and rock salt.
  7. Put the tagine on charcoal fire with low heat and cover with the top lid.
  8. Let it simmer for about 40 to 45 minutes.
  9. You can once turn the chicken pieces, if required.
  10. Garnish with lettuce and serve hot.
