Spicy and tangy tom yum rice

Relish this tangy, spicy and delicious fried rice preparation with tom yum soup based ingredients which gives it a divine flavor to liven up your taste buds.

Servings: 5

Ingredients:
  • 3 cups cooked jasmine rice
  • 6 to 8 medium sized prawns (chopped)
  • 1 egg (whisked)
  • 1/4 cup red bell pepper (thinly sliced)
  • 1/4 cup mushrooms (finely chopped)
  • 2 inch lemongrass stem (crushed)
  • 4 to 5 kaffir lime leaves (finely minced)
  • 1/2 tsp belacan shrimp paste
  • 2 tsp soy sauce
  • 1 tsp fish sauce
  • 2 red chilies (chopped)
  • 1 onion (sliced)
  • 1 tsp lime juice
  • 3 tsp peanut oil
  • salt to taste

Instructions:

  1. Heat peanut oil in a wok on a medium flame.
  2. Add sliced onion with chopped red chilies and toss for a minute.
  3. Add whisked egg and scramble it for half a minute.
  4. Follow it with the addition of red bell peppers and mushrooms.
  5. Toss for about 2 minutes and add prawns with lemongrass and kaffir lime leaves.
  6. Season with belacan paste, soy sauce, fish sauce, lime juice and salt.
  7. Saute on a high flame for about 2 to 3 minutes.
  8. Finally add cooked jasmine rice and once again toss and stir fry for about 3 to 4 minutes.
  9. Garnish with your favorite ingredients and serve immediately.
