The following pasta recipe is made by me for the first time and fortunately it came out quite well and was relished by all the family members. To get the best results, use rigatoni pasta. It's a complete meal and goes well with a glass of quality red wine. Sausage ragu is the highlight of this recipe. Making it correctly can add the required spark in this preparation. Although you can use the same sauce base with spaghetti too, making it with such type of pasta is highly recommended. Just before serving, you can also grate generous amount of processed cheese on top. Try to use fresh local herbs and spices for aromatic flavor. Spicy pasta with sausage ragu

Enjoy this spicy and delicious pasta recipe consisting of lip smacking sausage ragu base seasoned with fresh herbs and cooked with rigatoni on low heat.

Servings: 4

Ingredients:
  • 250 gm rigatoni pasta
  • 350 gm Italian sausages (shell removed & mashed)
  • 2 medium sized shallots (finely chopped)
  • 1/2 cup Parmigiano cheese (grated)
  • 1 garlic clove (mashed)
  • small bunch of parsley (finely minced)
  • 300 gm fresh tomato sauce
  • 1/4 tsp dried chili flakes
  • 1/4 cup red or white wine
  • fresh ground pepper (for seasoning)
  • 3 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Bring 2 liters of water to a boil and add a pinch of salt in it.
  2. Switch the flame to low and add pasta in it.
  3. Gently stir for about 5 minutes till the pasta is done.
  4. Drain all the water and keep the pasta aside.
  5. Heat olive oil in a large nonstick skillet.
  6. Saute chopped shallots and mashed garlic for about a minute on a low flame.
  7. Add mashed sausages and stir fry for about 5 minutes.
  8. Add tomato sauce with wine and once stir gently.
  9. Close the lid and simmer for about 10 minutes.
  10. Season with chili flakes, ground pepper and salt.
  11. Stir for a minute and add boiled pasta with cheese and parsley.
  12. Toss and stir for 2 minutes and bring down from the flame.
  13. Serve hot with a strong cup of coffee.
