Fiery peri peri sauce chicken with grilled corn

Savor this fiery hot grilled chicken drenched in spicy peri peri sauce base and is served with scrumptious grilled corn increasing the nutrition quotient.

Ingredients:
  • 2 pounds chicken (chopped)
  • 2 to 3 corns (cut in 2" pieces)
  • 8 dried peri peri chilies
  • 4 dried sweet paprika chilies
  • 2 garlic cloves
  • 2 tsp fresh lime juice
  • 1/4 cup coriander leaves (chopped)
  • 1/2 cup extra virgin olive oil
  • 8 black pepper seeds
  • 1/2 tsp red chili flakes
  • salt to taste

Instructions:

  1. Roast peri peri and sweet paprika chilies along with garlic in a griddle for about 2 minutes.
  2. Add the roasted ingredients along with lime juice, coriander leaves, extra virgin olive oil, pepper seeds, chili flakes and salt in a food processor.
  3. Blend and pulse all the ingredients into a sauce with coarse consistency.
  4. Make cuts in the chicken pieces with a sharp knife.
  5. Apply hot peri peri sauce on the pieces well such that in goes deep inside the cuts.
  6. Grill or roast the marinated chicken pieces till they're done.
  7. Sprinkle salt on corn pieces and grill them as well.
  8. Take a serving plate and arrange both the ingredients.
  9. Serve hot after squeezing lime juice on top.
