Cheesy stuffed flat bread with herbs

Enjoy this delicious stuffed pita bread which is stuffed with dual combo of grilled cheese and is enhanced with fresh basil and loads of yummy tomatoes.

Preparation Time: 15 minutes
Cooking time: 5 minutes
Servings: 4

Ingredients:
  • 4 to 6 pieces of pita flat bread (cut in halves)
  • 10 to 12 cherry tomatoes (sliced)
  • 200 gm mozzarella cheese
  • 200 gm pecorino cheese
  • fresh ground pepper
  • 1 tsp lime juice
  • bunch of basil leaves
  • bunch of rocket lettuce
  • 1 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Cut flat and thin pieces of mozzarella cheese and grate pecorino cheese on the former slices.
  2. Grill them in a microwave for about a minute.
  3. Make a bed of basil and rocket lettuce leaves on the pita bread halves.
  4. Arrange slices of cherry tomatoes and sprinkle lime juice, extra virgin olive oil and salt on them.
  5. Arrange the final layer of grilled cheese combo on top of it and season with ground pepper.
  6. Wrap and fold all the bread halves and serve with a salad bowl.
