Nutritious pumpkin and sweet potato salad

Do make this delicious and simple salad preparation consisting of roasted pumpkin and sweet potatoes which are served with goat cheese and rocket lettuce.

Preparation Time: 25 minutes
Cooking time: 6 minutes
Servings: 4

Ingredients:
  • 300 gm sweet potatoes (diced)
  • 300 gm bit raw pumpkin (diced)
  • 1/2 cup goat curd cheese (whipped)
  • 2 medium sized tomatoes (sliced)
  • 1 red onion (sliced)
  • bunch of rocket lettuce
  • 2 tsp lime juice
  • pinch of white pepper powder
  • few drops of sesame oil
  • chopped coriander (for garnish)
  • 2 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Apply olive oil on diced pumpkin and sweet potato pieces.
  2. Roast them in a grill or microwave for about 6 to 8 minutes.
  3. Take a small bowl and add lime juice, white pepper powder, sesame oil and a pinch of salt in it.
  4. Whip it for a minute and keep aside.
  5. Take a salad bowl and make a layer of rocket lettuce, tomato slices and red onion.
  6. Place roasted pumpkin and sweet potatoes on top of it.
  7. Pour the zingy salad dressing on top.
  8. Finally add a scoop of whipped goat curd cheese.
  9. Garnish the cheese with finely chopped coriander leaves.
  10. Serve immediately with your main course meal.
