This recipe is a complete meal packed with vital nutrients. Fresh chicken breast is one of the prerequisites to get the best results. I've tried to keep the entire preparation light and subtle so that everyone can enjoy it. Boiled lentils are a good source of protein and taste great too. Addition of garlic ensures you get a nice texture and flavor. Instead of chicken breast, you can also use duck fillets though the taste may change significantly. Instead of roasting, one can also bake the chicken breast to reduce the amount of oil used in the recipe. I've not mashed the lentils completely which can be changed to puree too. Spicy and roasted chicken with lentil and potato puree

Savor these delicately flavored chicken breasts which are roasted evenly for a great texture and are served with potato and lentils stew for added flavor.

Servings: 4

Ingredients:
  • 5 to 6 chicken breasts
  • 300 gm potatoes (boiled and mashed)
  • 1/2 cup lentils (soaked overnight)
  • 6 to 8 garlic cloves (mashed)
  • 1/4 tsp ground pepper
  • 1/2 tsp lime juice
  • 100 gm onion paste
  • 1 tsp ginger garlic paste
  • 1 tsp light soy sauce
  • pinch of paprika
  • 1 cup chicken stock
  • 1 small tomato (chopped)
  • 4 to 5 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Add a pinch of ground pepper and salt in mashed potatoes and mix well.
  2. Keep it in a refrigerator covered with aluminum foil until needed.
  3. Sprinkle remaining ground pepper, mashed garlic, lime juice, 3 tsp olive oil and salt on chicken breasts.
  4. Apply all the seasoning ingredients well on the chicken pieces and keep aside.
  5. Boil lentils in a pressure cooker with half a liter of water for about 15 minutes.
  6. Drain all the water and keep the lentils aside.
  7. Take a pan and heat remaining olive oil in it.
  8. Add ginger garlic paste and saute for a minute.
  9. Add onion paste and stir fry till it turns light brown.
  10. Finally add boiled lentils and season with light soy sauce, paprika and salt.
  11. Stir fry for about 2 minutes and add tomatoes with chicken stock.
  12. Mash and stir it for 2 to 3 minutes and then cover with lid.
  13. Simmer for about 15 minutes and remove from the flame.
  14. Heat a grill to the maximum heat and roast all the seasoned chicken breast on it.
  15. Roast for at least 6 minutes on each side till they're done.
  16. Take a serving plate and take a generous helping of lentil puree.
  17. Place a scoop of seasoned mashed potatoes on one side and garnish with your favorite green vegetable.
  18. Finally top it with nice and hot roasted chicken breast.
  19. Serve hot with bread or rice.
