This recipe is a double delight as I've included both lamb and chicken wings. While making this recipe, you must be aware of the fact that chicken skewers cook much quicker than normal lamb skewers. To balance that cooking time, add raw mango paste within lamb meat and keep aside for some time to make it tender. Serve these skewers with fresh coriander sauce and onion rings. Leftovers of these skewers can be shredded to be included in breakfast sandwiches. Do not hesitate to include your local seasoning ingredients to liven up this recipe. I keep the uncooked marinated skewers in refrigerator and grill them right before serving. Let's quickly make this mouth watering grilled recipe.

Spicy lamb and chicken wings skewers

Do try this spicy and lip smacking preparation consisting of seasoned chicken wings and lamb skewers grilled to perfection with an amazing aroma and flavor.

Preparation Time: 1 hour 20 minutes
Cooking time: 10 minutes
Servings: 8

Ingredients:
  • 500 gm boneless lamb meat (2" pieces)
  • 500 gm chicken wings (2" pieces)
  • 100 gm raw mango paste
  • 1/2 tsp ground pepper
  • 1/2 tsp red chili paste
  • 2 tsp ginger garlic paste
  • 1 tsp poppy seeds paste
  • 1/2 tsp green chili paste
  • 1/2 tsp cumin seeds powder
  • oodles of extra virgin olive oil
  • salt to taste

Instructions:

  1. Take a large bowl and add both lamb and chicken wing pieces in it.
  2. Add ground pepper, chili paste, ginger garlic paste, poppy seeds paste, green chili paste, cumin seeds powder, salt and generous amount of olive oil in it.
  3. Mix all the ingredients well with your hands and let the spicy marinade cover all the pieces.
  4. Take out lamb pieces in a separate bowl and add raw mango paste in it.
  5. Mix the paste well in the marinated lamb pieces.
  6. Keep both the bowls aside for at least an hour.
  7. If possible, marinate the pieces overnight for best results.
  8. You can either use bamboo skewers or the metal ones.
  9. Carefully pierce all the pieces within skewers.
  10. Heat a charcoal grill with maximum flame.
  11. Grill all the skewers from all the sides for 5 minutes each.
  12. If required, pour the left over marinade from top while grilling.
  13. Let the skewers turn golden brown indicating they're grilled to perfection.
  14. Serve hot with spicy coriander sauce.
