Fried Rice with Prawns, Potatoes and Lettuce

Like some other classic recipes, fried rice can also be made in infinitely different ways. Generally, I do not add potatoes in fried rice but this one is quite different. Apart from my favorite prawns, I've also added the king of vegetables to give it a twist. This recipe is based on south East Asian fried rice ingredients and can be changed as per your preferences. You can easily keep this fried rice in refrigerated form for up to 2 days. If tiger prawns are available in your locality, nothing can be better than that. Otherwise, you can use any prawn variety. My family prefers to eat it with flavored condensed coconut milk. Let's quickly make this yummy and aromatic fried rice recipe for our family members in a few steps.

Prawns and potatoes fried rice

Enjoy this spicy and fulfilling fried rice recipe which includes loads of fresh prawns with potatoes making it a complete and wholesome meal for every occasion.

Cooking time: 40 minutes
Servings: 5

Ingredients:
  • 2 cups short grain rice (soaked overnight)
  • 400 gm prawns
  • 3 big potatoes (diced or sliced)
  • 1/4 tsp ground pepper
  • 2 tsp dark soy sauce
  • 1 tsp Thai chili paste
  • 1/4 tsp oyster sauce
  • 100 gm onion paste
  • 1 stem lemongrass
  • 1 tsp ginger garlic paste
  • small bunch of lettuce (chopped)
  • 4 tsp peanut oil
  • salt to taste

Instructions:

  1. Parboil rice in salted water and keep aside. Make sure you've drained all the water from the rice.
  2. Similarly parboil potatoes and keep aside
  3. Sprinkle pinch of salt and ground pepper on prawns and lightly saute in a nonstick pan for about 2 minutes. Keep aside.
  4. Take a large wok and heat peanut oil in it.
  5. Add ginger garlic paste and saute for a minute.
  6. Add onion paste and stir fry till it turns light brown.
  7. Add potatoes and prawns and toss for a minute.
  8. Season with dark soy sauce, Thai chili paste, oyster sauce and salt.
  9. Add lemongrass stem too and stir fry for 3 to 4 minutes.
  10. Finally add rice and saute for about 5 minutes.
  11. Take out the lemongrass stem and garnish with chopped lettuce before serving.
