This clear and delicious soup is a complete meal in itself. Lamb or mutton can be used for this healthy soup. You can also make the spicier version of this soup, if required. You'll need both lamb bones and meat chunks for making this soup. One can innovate and can add vegetables too in this classic soup. In the same way, you can also prepare duck or chicken soup. If you're going to make it in large quantity, keep the cooked lamb pieces separate and add them just before serving. One can also sprinkle ground black pepper on top before serving. Clear soup of lamb bone and noodles

Enjoy this healthy and nutritious clear soup recipe made with lamb bone stock and boneless lamb meat which is cooked with noodles, spices and select herbs.

Preparation Time: 30 minutes
Cooking time: 1 hour 40 minutes
Servings: 8

Ingredients:
  • 500 gm lamb bones
  • 500 gm lamb meat (2" pieces)
  • 200 gm noodles
  • 1/4 tsp white pepper powder
  • few drops of white vinegar
  • 1 tsp soy milk
  • 1/4 tsp garlic powder
  • 1 green chili paste
  • coriander leaves (for garnish)
  • 3 tsp peanut oil
  • salt to taste

Instructions:

  1. Take 2 liters of water in a sauce pan and add lamb bones in it.
  2. Simmer on a low flame with covered lid for an hour.
  3. Filter the bone juice in a separate sauce pan and keep aside.
  4. Boil 800 ml water in a pan and add noodles in it.
  5. Gently stir for about 4 minutes and drain all the water.
  6. Keep the boiled noodles aside.
  7. Pressure cook lamb pieces for about 20 minutes with 1 tsp peanut oil, green chili paste, 500 ml water and salt.
  8. Take a deep sauce pan with a heavy base and heat 2 tsp peanut oil in it.
  9. Add garlic powder and stir fry for half a minute.
  10. Add concentrated bone juice and season with white pepper powder, white vinegar, soy milk and salt.
  11. Simmer for about 10 to 15 minutes.
  12. Add cooked lamb pieces and noodles.
  13. Simmer for 5 more minutes.
  14. Garnish with chopped coriander leaves and serve hot.
