The combination of crispy calamari fritter and boiled borlotti beans is awesome. And, if you have flavorful marinated eggplants at the bottom, nothing can be better than that. I've also used some green herbs and vegetables to elevate the flavor and texture. Remember, calamari is very tender and the cooking time is very less. While deep frying them, make sure the oil is not very hot. Instead of borlotti, you can also use local green bean variant provided it is boiled properly. Leftovers of calamari fritters can be included in a curry base. You can also mix squids in this recipe quite easily. Calamari fritters with eggplants and beans

Enjoy these crispy and spiced up calamari fritters which are served with delicious beans and marinated eggplant slices for a unique combination and taste.

Ingredients:
  • 300 gm calamari (sliced)
  • 1/2 cup borlotti beans (parboiled)
  • 3 long eggplants (sliced)
  • few leaves of radicchio (chopped)
  • small bunch of rocket lettuce
  • 1/5 cup refined flour
  • 1/5 cup semolina
  • 1 tsp ginger garlic paste
  • 3 tsp light soy sauce
  • 1/4 tsp red chili paste
  • 1/4 tsp onion powder
  • oodles of olive oil
  • refined vegetable oil for deep frying
  • salt to taste

Instructions:

  1. Take a bowl and add refined flour, semolina, ginger garlic paste, red chili paste and salt in it.
  2. Slowly add water and make a nice batter for the calamari fritters.
  3. Take another bowl and add light soy sauce, onion powder, 2 tsp olive oil and a pinch of salt in it.
  4. Whip briskly for a minute and add all the eggplants slices in the marinade. Keep aside for at least 15 minutes.
  5. Heat refined oil in a deep pan.
  6. Add calamari pieces in the batter and deep fry till they turn light brown on a medium flame.
  7. Place on a blotting paper to remove excess oil.
  8. Take a nonstick grill pan and grease it with olive oil.
  9. Quickly saute marinated eggplant pieces in it for a minute.
  10. Add borlotti beans with radicchio and rocket lettuce.
  11. Toss and saute for half a minute.
  12. Add calamari fritters and serve hot.
