I often make fried rice with minced beef for my family. Today's fried rice also includes tofu along with spiced up minced beef to make the entire preparation, almost irresistible. One can either use rice or wheat vermicelli for this recipe. People who don't like red meat can use shredded duck or chicken meat instead of minced beef. We often serve it with spicy curry and tangy salad to complete the meal. Do not refrigerate this recipe for long time else moisture released from vermicelli may spoil the texture and flavor. Additional green vegetables can give a kick to this nice preparation. Let's quickly make this delicious, fulfilling and easy recipe in a few steps for our loved ones.

Vermicelli fried rice with beef mince and tofu cubes

Do make this fulfilling and scrumptious meal consisting of vermicelli and spicy fried rice which are cooked with seasoned minced beef and yummy tofu bites.

Ingredients:
  • 350 gm minced beef
  • 200 gm tofu (diced)
  • 150 gm vermicelli
  • 2 cups rice
  • 1 tsp dark soy sauce
  • 1/2 tsp oyster sauce
  • 1/2 tsp red chili paste
  • 1 medium onion (finely sliced)
  • 3 to 4 garlic cloves (crushed)
  • 1/4 tsp cumin seeds powder
  • 1/4 cup green onion leaves (finely chopped)
  • 4 tsp peanut oil
  • salt to taste

Instructions:

  1. Add 1 liter water in a pressure cooker with minced beef and a pinch of salt.
  2. Close and lid and put on a high flame till the pressure is reached.
  3. Switch the flame to medium and let the beef cook for 20 minutes.
  4. Drain all the water and keep the beef aside.
  5. Similarly, parboil both rice and vermicelli in separate sauce pans and drain water from them as well.
  6. Take a wok and heat peanut oil in it.
  7. Add crushed garlic cloves and saute for a minute.
  8. Add sliced onions and stir fry till it turns light pink.
  9. Add minced beef with tofu and saute for about 3 to 4 minutes.
  10. Finally add both rice and vermicelli and switch the flame to medium.
  11. Season with dark soy sauce, oyster sauce, chili paste, cumin seeds powder and salt.
  12. Toss and saute for 5 to 6 minutes.
  13. Sprinkle chopped green onions leaves on top and switch off the flame.
  14. Serve hot with a spicy curry.
