Lightly stir fried fresh vegetables

Do enjoy these lightly stir fried vegetables seasoned with mild and fresh spices to make a nutritious and fiber packed serving to fulfill your hungry tummy.

Ingredients:
  • 1/2 cup broccoli (chopped)
  • 1/2 cup carrots (sliced or diced)
  • 1/2 cup mushrooms (diced)
  • 1/4 cup black olives
  • 1 big tomato (sliced)
  • pinch of onion powder
  • pinch of white pepper powder
  • 1/2 tsp lime juice
  • few drops of sesame oil
  • 3 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Take a nonstick fry pan and heat olive oil in it.
  2. Add carrots with tomatoes and saute for 2 to 3 minutes on a low flame.
  3. Once the tomatoes are tender, add broccoli with mushrooms and black olives.
  4. Gently toss and stir fry for 3 to 4 minutes on a medium flame.
  5. Season with onion powder, white pepper powder, lime juice, sesame oil and salt.
  6. Stir fry with a wooden spatula on a high flame for 2 minutes.
  7. Sprinkle quarter up of water and simmer for about 6 minutes.
  8. Once the water dries up, gently toss and stir fry again for 3 minutes.
  9. Let it cool down to room temperature.
  10. Serve hot with your favorite bread.
