This toast has a Greek touch of spices and tastes heavenly. I've used edible wild mushrooms though you can use regular button mushrooms too. Asiago cheese goes so well with toasts. If you cannot find it, use regular Parmesan cheese or the more common processed cheese slices. Mushrooms cook very quickly and tastes good too provided you've amalgamated them with a nice collection of herbs and spices. Serve these hot toasts with strong coffee or flavored milk. As far as the bread is concerned, you can either use French toast bread or the regular one available in your home. If you want to increase the number of servings, add eggplants or sliced zucchini along with mushrooms and cheese.

Cheesy and spicy mushroom toast

Do make this delicious and nutritious toast recipe topped with stir fried mushroom slices seasoned with peppers and herbs to enrich your morning breakfast.

Cooking time: 8 minutes
Servings: 6

Ingredients:
  • 10 to 12 toast bread
  • 1 cup wild mushrooms (sliced)
  • 200 gm Asiago cheese
  • 1 tsp dried herbs
  • 1 tsp fresh oregano
  • 1/4 tsp white pepper powder
  • 1/4 tsp black pepper powder
  • 1/2 tsp garlic powder
  • pinch of paprika
  • oodles of extra virgin olive oil
  • salt to taste

Instructions:

  1. Take a nonstick fry pan and add 2 tsp olive oil in it.
  2. Add mushrooms with dried herbs, garlic powder, black pepper powder, paprika and salt.
  3. Toss and simmer for about 3 to 4 minutes and bring down from the flame.
  4. Slice the toast bread in your desired shape and sprinkle generous amount of olive oil on it.
  5. Place a generous helping of seasoned mushroom on top of it.
  6. Sprinkle white pepper powder and oregano above it.
  7. Finally shred Asiago cheese on top of each toast.
  8. Grill in a preheated oven at 200 degrees for 5 minutes.
  9. You can sprinkle additional cheese after the toasts are out from the grill.
  10. Serve hot with a beverage.
