It's a complete meal and an ideal main course entry. Quail breasts are slightly firm than chicken breast so make sure your cooking time is bit more when compared to the latter. For best results, you can also make deep cuts so ensure the seasoning go deep inside breasts. Needless to say, you can freely choose the local seasonal vegetables replacing the ones mentioned in the list below. If you do not prefer pan fried veggies, you can bake them in a microwave. Grilled quail breast with roasted veggies

Do make this extremely delicious grilled quail breast recipe which is flavored with pungent spices and is served with equally tasty pan fried vegetables.

Preparation Time: 25 minutes
Cooking time: 30 minutes
Servings: 4

Ingredients:
  • 6 to 8 quail breasts
  • 1/2 cup broccoli (chopped)
  • 1/2 cup mushrooms (chopped)
  • 1/2 cup carrots (chopped)
  • 1/2 cup potatoes (diced & parboiled)
  • 50 ml sherry or white wine
  • 1 tsp garlic (mashed)
  • 2 tsp onion powder
  • 1/4 tsp black pepper powder
  • 2 tsp fresh lime juice
  • 100 gm onions (finely chopped)
  • 1/4 tsp paprika
  • pinch of white pepper powder
  • 1/2 tsp fennel seeds powder
  • 1/2 tsp cumin seeds powder
  • 6 to 8 tsp olive oil
  • salt to taste

Instructions:

  1. Wash all the chopped and diced vegetables in cold water and keep aside.
  2. Take a bowl and add quail breasts in it.
  3. Add sherry, garlic paste, onion powder, black pepper powder, lime juice, salt and 3 tsp olive oil in it.
  4. Rub all the ingredients well over the breasts on both the sides.
  5. Seal the bowl with aluminum foil and keep aside.
  6. Heat 3 tsp olive oil in a nonstick fry pan.
  7. Add chopped onion and saute till they turn light brown.
  8. Add vegetables and toss them well for about a minute on a medium flame.
  9. Season with paprika, white pepper powder, fennel seeds powder, cumin seeds powder and salt.
  10. Saute for about 4 to 5 minutes.
  11. Close the lid and simmer for 5 more minutes.
  12. Toss and stir fry for 2 minutes and switch off the flame.
  13. Prepare a charcoal grill with medium heat.
  14. Place marinated quail breasts on the grill.
  15. Grill from both the sides for 6 to 8 minutes each.
  16. Brush extra olive oil, if required.
  17. Take a serving plate and make a layer of pan fried vegetables.
  18. Place grilled quail breasts on top and serve immediately.
