Though my kids don't like pumpkin, my husband loves it in every form. Today's pumpkin recipe is bit spicy with delicious flavor of herbs. You can freely substitute the fresh herbs used in this recipe with local variants or substitutes. We love to consume this recipe with rice though it goes well with bread too. You can also add zucchini in this preparation to experiment with the flavor. Use ripe pumpkin to get the best results. Semi boiled peas can add color as well as unique flavor in this recipe. If you're using raw green pumpkin, slightly change the proportions of dried spices to balance the flavor. Before serving, you can top it with mint and hung curd dip to make it irresistible. Pumpkin with basil and chili seasoning

Do relish this easy and delicious pumpkin recipe which can be made quickly with handful of fresh spices and herbs giving the preparation a unique flavor.

Ingredients:
  • 600 gm pumpkin (diced without skin)
  • 1 tsp ginger garlic paste
  • 1/4 tsp red chili paste
  • 1/4 tsp black mustard seeds
  • 1/4 tsp tamarind pulp
  • pinch of black pepper
  • 50 gm onion paste
  • 1 green chili (finely chopped)
  • small bunch of basil leaves
  • coriander leaves for garnishing
  • 3 tsp refined oil
  • salt to taste

Instructions:

  1. Take half of the basil leaves and blend them into paste with little water.
  2. Heat refined oil in a deep sauce pan.
  3. Crackle black mustard seeds in it for about half a minute.
  4. Add onion paste and saute till it turns light brown.
  5. Add ginger garlic paste and saute for a minute.
  6. Add pumpkin dices with red chili paste, tamarind pulp, black pepper, green chili, basil paste and salt.
  7. Toss and gently stir fry for about 2 to 3 minutes on a low flame.
  8. Add half glass of water and cover the lid.
  9. Simmer for about 10 minutes and mash with a spatula stirring it for about 2 minutes.
  10. Garnish with basil and coriander leaves and serve hot.
