This is one of the spiciest soups my entire family loves to relish on weekends. The following preparation is a wholesome recipe and is loaded with different types of vegetables. The secret to a good tom yum soup lies in the correct balance between tangy and spicy flavor. You can reduce the consistency of the soup and can consume it with steamed rice too. Do make this classic Thai Tom Yum soup recipe which consists of loads of vegetables and is flavored with authentic local spices for a tangy and spicy flavor.

Servings: 6

Ingredients:
  • 100 gm tofu (sliced into small cubes)
  • 1/2 cup button mushrooms (thinly sliced)
  • 1/2 cup bok choy (thinly sliced)
  • 1/2 cup carrots (sliced)
  • 2 to 3 medium tomatoes (sliced)
  • 1" piece of galangal (finely chopped)
  • 3 to 4 garlic cloves (finely chopped)
  • 3 to 4 fresh kaffir lime leaves
  • 2 to 3 stalks of lemongrass (crushed or chopped)
  • 2 tsp chili paste
  • 1 green chili (finely chopped)
  • 1/2 tsp light soy sauce
  • 1/2 tsp fish sauce
  • 4 to 5 shallots paste
  • pinch of white pepper powder
  • 6 cups vegetable stock
  • 1 tsp lime juice
  • cilantro for garnishing
  • salt to taste

Instructions:

  1. Take a deep sauce pan and add vegetable stock in it.
  2. Bring it to a boil and lower the flame.
  3. Add galangal, garlic, lemongrass and kaffir lime leaves in it.
  4. Once stir gently and close the lid.
  5. Simmer for about 6 minutes.
  6. Add tofu, button mushrooms, bok choy and carrots.
  7. Once again stir gently and simmer for 6 minutes again.
  8. Finally add tomatoes, chili paste, green chili, light soy sauce, fish sauce, shallots paste, white pepper powder, lime juice and salt in it.
  9. Keep stirring gently while simmering the soup on a low flame for about 8 to 10 minutes.
  10. Garnish with chopped cilantro and serve hot.
