These delicious fish fillets are crispy from outside but moist and tender from inside. Depending on your taste, you can experiment with the batter used for the fillets. The accompanying basil and chili sauce is mild in flavor and perfectly compliments the crispy fillets. If you prefer, you can make thick gravy with the same ingredients and can mix shredded fillets in it. You can also use these fish fillets with dry tossed noodles. For best results, use pomfret or salmon fillets. To make the recipe exotic, you can stuff caramelized or roasted dry fruits within fillets. If you want to keep these yummy fillets for big long time, refrigerate them wrapped in an aluminum foil separately without dipping in the basil chili sauce.

Crisp fried fish fillets with basil sauce

Try out this spicy and inviting preparation consisting of crisp fried fish fillets served with spicy basil sauce and piping hot rice making it a complete meal.

Servings: 4

Ingredients:
  • 600 gm salmon or pomfret fillets
  • 1/2 cup semolina
  • 1/4 cup dried breadcrumbs
  • 2 eggs
  • pinch of black pepper powder
  • small bunch of fresh basil leaves
  • 2 tsp chili sauce
  • 1/4 tsp white pepper powder
  • 1 tsp light soy sauce
  • 1/2 tsp fish sauce
  • 50 gm onion paste
  • 1/2 tsp dried herbs
  • 2 cups vegetable or prawns stock
  • pinch of garlic powder
  • noodles (for garnishing)
  • refined oil for deep frying
  • salt to taste

Instructions:

  1. Wash all the fillets and keep aside.
  2. Rub dried herbs, black pepper powder and salt on the fillets and keep aside for half an hour.
  3. Take a bowl and add semolina, breadcrumbs, eggs and salt in it.
  4. Add water and whip it gently to form a dense batter with thick consistency.
  5. Heat refined oil in a deep frying pan on a medium heat.
  6. Dip seasoned fillets in the batter and coat them properly.
  7. Fry all the fillets on a low flame till they turn light brown.
  8. Place on a paper to remove excess oil.
  9. Wash basil leaves and blend them into a smooth paste.
  10. Take a sauce pan and heat 3 tsp oil in it.
  11. Saute onion paste in it till it turns light pink.
  12. Add basil leaves paste and chili sauce.
  13. Gently stir and saute for about 2 minutes.
  14. Season with white pepper powder, soy sauce, fish sauce, garlic powder and salt.
  15. Add stock and stir gently.
  16. Close the lid and simmer till spicy sauce is reduced to half.
  17. Boil and saute noodles with a pinch of soy sauce and salt.
  18. Take a serving plate and pour generous amount of basil chili sauce in it.
  19. Top it with crispy fish fillets.
  20. Garnish with noodles and serve immediately.
