My family members simply love smoky flavor of tender lamb meat. It is relished by my in laws and husband very much. To get the best results, the quality of lamb meat should be above excellent. The peppery sauce used in this recipe is quite easy-to-make. You can either serve plain yoghurt with the serving or can season it with select herbs. If you want to keep it for more than one day, you can add few drops of mild apple vinegar in it. To increase the number of servings, you can also add smoked and seasoned eggplants in it. Exotic smoked lamb recipe

Try out this exotic smoked lamb preparation which is delicately flavored with fresh herbs and select spices and is served with whipped yoghurt and lettuce.

Preparation Time: 1 hour
Cooking time: 30 minutes
Servings: 4

Ingredients:
  • 900 gm tender lamb meat
  • 250 gm whipped yoghurt
  • 1 tsp dried rosemary
  • few thyme sprigs
  • 1/4 tsp chili powder
  • 25 gm cinnamon powder
  • 1/4 tsp black pepper powder
  • 3 tsp red wine
  • 2 tsp dried red cherry paste
  • 3/4 cup stock
  • 1/4 cup extra virgin olive oil
  • salt to taste

Instructions:

  1. Take a flat nonstick pan and heat 3 tsp olive oil in it.
  2. Add dried red cherry paste and gently stir fry for about 2 minutes on a low flame.
  3. Add red wine and season with black pepper powder and salt.
  4. Saute for a minute and add the stock.
  5. Once stir gently and close the lid.
  6. Simmer till the sauce is reduced to half. Keep aside.
  7. Take lamb meat in a flat plate.
  8. Apply cinnamon powder, chili powder, dried rosemary and salt on it.
  9. Pour generous amount of olive oil on the seasoned meat and keep it aside for about 10 minutes.
  10. Heat the smoker at 250 degrees. Put thyme sprigs between the coals.
  11. Place the meat inside the smoker and cook for 30 minutes each side till the lamb is medium rare.
  12. Take a serving plate and place the smoked lamb pieces in between.
  13. Pour the peppery sauce on it.
  14. Serve hot with plain and whipped yoghurt.
