This delicious curry is cooked in hot and spicy red curry giving it an irresistible look. We prefer to eat it with rice though adding them to handmade egg noodles is also one of the good options. The red sauce used for curry is quite spicy that can be toned down reducing the amount of spices mentioned in the ingredients list. These prawns can be easily kept in a refrigerator for up to 2 to 3 days. To make it bit colorful, you can add broccoli and bell peppers too. Vegetarians can use the same ingredients to make tofu or cottage cheese. Instead of keeping curry with thin consistency, you can further dry it up adding more butter to get the glazed prawns. Prawns in fiery hot red curry

Do make this extremely spicy and delicious prawn preparation which is made in red curry base flavored with hot flavoring ingredients for an extra zing.

Servings: 5

Ingredients:
  • 800 gm fresh prawns
  • 2 tsp Thai curry paste
  • 1/2 tsp red chili paste
  • 200 gm fresh tomato puree
  • 1 tsp light soy sauce
  • 5 gm white pepper powder
  • 50 gm ginger garlic paste
  • 250 gm onions (sliced)
  • lemongrass stalk
  • 2 glasses vegetable stock
  • 1/2 tsp corn flour
  • 4 tsp cooking oil
  • salt to taste

Instructions:

  1. Take prawns in a bowl and add tomato puree, Thai curry paste and red chili paste in it.
  2. Mix it well and let the prawns in the marinade for about 15 minutes.
  3. Heat refined oil in a deep sauce pan.
  4. Add sliced onions and saute for about a minute.
  5. Add ginger garlic paste and stir fry for two minutes.
  6. Add prawns dipped in marinade along with all the marinade.
  7. Switch the flame to medium and gently saute for about 3 minutes.
  8. Add lemongrass, light soy sauce, white pepper powder and salt.
  9. Stir fry for 3 minutes and add vegetable stock.
  10. Once stir gently and close the lid.
  11. Simmer till the gravy is reduced to half.
  12. Mix corn flour in 3 tsp of water and add in the gravy.
  13. Simmer for about 5 minutes.
  14. Garnish with chopped green onions and serve hot.
