This wholesome recipe includes fiber and protein wrapped in a lip smacking flavor. Baked zucchini is generally made with different types of stuffing. We're using both boneless chicken mince and salted fish for stuffing our zucchini slices. You can also use canned salted or pickled fish for this recipe though the fresh homemade version will give you better results. If you do not prefer zucchini, you can use nice and firm eggplants as the stuffing base. In that case, reduce the baking time as eggplants are comparatively tender. You can also include these baked zucchini slices in a rich and creamy gravy with added spices. Another way to cook this recipe is to include it in a layered rice preparation.

Zucchini stuffed with chicken

Try this easy-to-make and delicious recipe made with stuffed zucchini consisting of minced chicken and salted fish seasoned with fresh herbs and spices.

Ingredients:
  • 500 gm zucchini (nice and big)
  • 300 gm chicken mince
  • 250 gm salted fish (canned)
  • 1 tsp ginger garlic paste
  • 1 tsp Thai curry paste
  • pinch of black pepper (coarsely ground)
  • 1/4 tsp dark soy sauce
  • 1/2 tsp lime juice
  • chopped spring onions for garnishing
  • oodles of olive oil
  • salt to taste

Instructions:

  1. Wash zucchini and cut them into 2" slices.
  2. Peel the inside flesh keeping the base intact.
  3. Heat 5 tsp olive oil in a large and flat pan.
  4. Add ginger garlic paste in it and saute for about 2 minutes.
  5. Add Thai curry paste with 2 tsp of water and stir fry for a minute.
  6. Add chicken mince and season with black pepper powder, dark soy sauce, lime juice and salt.
  7. Saute for 4 to 5 minutes on a low flame.
  8. Add salted fish and saute for 2 minutes.
  9. Close the lid and simmer for about 3 minutes. Keep aside.
  10. Take a large baking tray and grease it well with the olive oil.
  11. Stuff the chicken and fish mince in the hollow zucchini slices and carefully place on the baking tray.
  12. Sprinkle some olive oil from top and bake them in a preheated oven at 200 degrees for about 12 minutes.
  13. Garnish with chopped spring onions.
  14. Serve hot with rice or bread.
