Cheesy and tangy pasta is always loved by my kids. Today's recipe includes a creamy pasta base with loads of ripe tomatoes and flavorful cheese. Since I've used generous amount of tomatoes for this pasta, it's bit more tangy than the normal preparation. Depending on your taste, you can reduce the amount of tomatoes used in this recipe. One can also add broccoli and mushrooms in this pasta for added flavor. Fresh grated cheese should be added in this pasta right before serving. Leftovers can be used either as a pizza topping or can be stuffed in a pie. Make sure you use the ripest tomatoes for the sauce base to get the best results. Cheesy and tangy Tortellini pasta

Enjoy this tangy, delicious and cheesy pasta delight which can be prepared in a few easy steps and can be served almost anytime to fulfill your hungry tummy.

Cooking time: 25 minutes
Servings: 4

Ingredients:
  • 300 gm tortellini pasta
  • 400 gm ripe tomatoes (pureed)
  • 1/2 cup Parmesan cheese (grated)
  • 1/4 tsp garlic powder
  • pinch of white pepper powder
  • pinch of red chili flakes
  • 2 tsp onion paste (roasted)
  • pinch of cinnamon powder
  • 50 gm processed cheese
  • 2 to 3 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Boil pasta in a sauce pan with 1 liter of water on a low flame for about 6 minutes.
  2. Drain excess water and keep the pasta aside.
  3. Take a deep sauce pan and heat olive oil in it.
  4. Add onion paste and saute for a minute.
  5. Add garlic powder, white pepper powder with cinnamon powder.
  6. Immediately add tomato puree with chili flakes and salt.
  7. Mix all the ingredients well with a spatula and simmer for about 10 minutes.
  8. Add processed cheese and simmer for 5 more minutes.
  9. Switch off the flame and add boiled pasta in it.
  10. Once stir again to let the tangy sauce absorb well within pasta.
  11. Take a serving plate and place a generous helping of tangy pasta.
  12. Sprinkle grated Parmesan cheese on top and serve hot.
