Cheesy potato salad with a spicy sauce dip is entirely optional. The spices used for duck leg are mild and flavorful. To get the best results, roast it on low heat from all sides. If you want to make the spicy version of the same, use chili flakes and dark soy sauce for the marinade. You can use the same process for turkey or chicken too. You must consume this recipe within 24 hours as the refrigerated leftover doesn't taste as good as the piping hot serving. Roasted duck leg with potatoes

Do make this scrumptious main course recipe consisting of delicately roasted duck leg served with cheesy potatoes and a flavorful sauce base for added taste.

Servings: 4

Ingredients:
  • 6 to 8 duck legs
  • 500 gm potatoes (boiled)
  • 100 gm Parmesan cheese (grated)
  • 3 to 4 tsp clarified butter
  • 1 tsp light soy sauce
  • 1/2 tsp dark soy sauce
  • 1/4 tsp white pepper powder
  • 1 tsp corn flour
  • 100 gm tomato puree
  • 3 tsp ginger garlic paste
  • pinch of turmeric powder
  • small bunch of coriander leaves (finely chopped)
  • 10 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Heat 3 tsp olive oil in a shallow frying pan.
  2. Add boiled potatoes in it on a low flame with turmeric powder and salt.
  3. Add small amount of chopped coriander, grated Parmesan cheese and saute for about 3 to 4 minutes. Keep aside.
  4. Mix corn flour and light soy sauce with 1/4 cup of water.
  5. Simmer it slowly for about 5 minutes in a separate pan.
  6. Add small amount of chopped coriander in it too and keep aside.
  7. Take a bowl and add clarified butter, dark soy sauce, white pepper powder, tomato puree, ginger garlic paste and salt in it.
  8. Mix all the ingredients with a spatula and add duck legs in it.
  9. Apply the marinade well with your hands on all the duck legs and cover them with aluminum foil. Keep aside for at least half an hour.
  10. Prepare a grill with medium heat.
  11. Sprinkle generous amount of olive oil on the marinated duck legs.
  12. Roast them from all the sides for 8 to 10 minutes each.
  13. Take a serving plate and pour soy sauce base at the bottom.
  14. Place seasoned potatoes above the sauce.
  15. Finally arrange the roasted duck leg on top and serve hot.
