Combination of fried rice and vermicelli is always killer! Addition of vegetables not only increases the number of servings but also add more nutritional value to the recipe. Depending on your taste, you can reduce or increase the amount of seasoning or spices. This is the dry version of this preparation though you can experiment by adding a soy based stew to the base ingredients. Instead of vermicelli, you can also use noodles or pasta with some added spices. I prefer to eat a bowl of this yummy preparation with a hot and spicy chicken stew. You must consume this recipe on the same day as boiled vermicelli looses its texture and shape if kept for long time. Let's make this scrumptious breakfast recipe.

Veg fried rice with vermicelli

Make this nutritious and fulfilling recipe which consists of vermicelli with fried rice cooked with veggies and flavoring spices giving it an awesome taste.

Preparation Time: 20 minutes
Cooking time: 35 minutes
Servings: 5

Ingredients:
  • 250 gm rice
  • 150 gm vermicelli
  • 1/2 cup carrots (finely sliced)
  • 1/2 cup cabbage (finely chopped)
  • 1 tsp light soy sauce
  • 1 tsp fish sauce
  • pinch of white pepper powder
  • 3 to 4 garlic cloves (mashed)
  • 1 cup chicken stock
  • 3 tsp refined vegetable oil
  • salt to taste

Instructions:

  1. Soak rice in water for an hour.
  2. Parboil them for about 8 minutes in chicken stock.
  3. Boil vermicelli in half a liter of water for about 5 minutes.
  4. Drain excess water and chicken stock from both the vermicelli and rice. Keep aside.
  5. Take a large wok and heat vegetable oil in it.
  6. Add mashed garlic and saute for about a minute on a low flame.
  7. Add cabbage and carrots for stir fry for 2 minutes.
  8. Add parboiled rice and season with light soy sauce, white pepper powder and salt.
  9. Stir fry it on a high flame for about 3 minutes.
  10. Add vermicelli with fish sauce and toss well.
  11. Switch off the flame and serve immediately.
